Whoopie Pies


A major upgrade to the traditional Joe Louis, Whoopie Pies are quickly gaining a reputation as the new trendy dessert. These Whoopie Pies are sandwiched with Swiss Meringue Buttercream and garnished with rainbow sprinkles.

The anatomy of a whoopie pie consists of cake-like cookies and buttercream. They are similar to the famed cupcake, except much less delicate, making them the ideal treat for picnics and lunch boxes. In my humble opinion, they also win in cuteness points. This recipe yielded a slightly dry chocolate sponge cake and sinfully smooth buttercream. It was my first time making them, so next time I plan to opt for buttermilk instead of whole milk, my go-to trick to moisten cake batters.
